Bon Appétit: Fish Taco Bowls

The best weeknight meal! With perfectly cooked fish, pineapple cilantro rice ,and the MOST delicious spicy coleslaw!

Watch the video to see me prepare an amazing dish using an air fryer! I have to say an air fryer makes cooking ten times easier. It is one of my favorite appliances to use in the kitchen. It is quick and easy! Below is the recipe for all the components to my fish taco bowl!


FISH TACO BOWL RECIPE:

* This recipe does call for an Air Fryer!


Pineapple Rice:

  • 1 cup of cooked rice

  • 1/2 cup of chopped pineapple

  • Fresh lime juice

  • 2 tablespoons of cilantro

  • Salt

  • Pepper


While the rice is still warm, add all the above ingredients in a bowl! It is that easy! Put the bowl of rice to the side and move onto your next step.


Spicy Coleslaw:

  • 8 oz of coleslaw mix

  • 4 tablespoons of diced red pepper

  • Fresh lime juice

  • 2 tablespoons of cilantro

  • 1 tablespoon of sriracha

  • 1 tablespoon of honey

  • 1 tablespoon of apple cider vinegar

  • 4 tablespoons of Lite Ranch Dressing (Hidden Valley is a great brand!)

  • Salt

  • Pepper


For this step, take a small bowl and whisk together your sriracha, honey, apple cider vinegar, and ranch dressing. Then pour dressing into a bigger bowl with your coleslaw mix, red peppers, cilantro, lime juice, salt, and pepper. Mix it up like a salad and make sure everything is evenly covered. You then can put this aside and move onto the fish!


Fish:

  • White Fish ( Can be substituted with shrimp or salmon)

  • Oil of your choice ( I like avocado oil!)

  • Taco seasoning


All you need to do is cover your fish of choice with the oil and taco seasoning. Now that all your prep is completed, its time to AIR FRY.


Preheat your air fryer to 375°F. Spray the basket with a cooking spray and cook your fish for 8-10 minutes. Make sure to flip your fish half way through! Put your rice, coleslaw, and fish in a bowl. You can add small amount of cheese and cilantro as a garnish! I like to add my favorite tortilla chips for a little crunch.
