Have you heard of Baked Oatmeal?

Written By: Victoria Tully

Up until last year I had never heard of Baked Oatmeal. Now, it’s one of my favorite meals. It’s a tasty and nutritious breakfast that's perfect for anyone! Above is a step by step video on how to make this deliciously sweet breakfast. Here is one of my favorite recipes:

Ingredients:

2 Cups of Rolled Oats

2 Cups of Boiled Water

3 Small (or 2 Large) Bananas (1 more if desired for a topping)

1 Tablespoon of Ground Flax seed

3 Tablespoons of Water

¼ Cup of Maple Syrup

¼ Cup of Protein Powder

¼ Hemp Seeds

½ Cup of Oatmeal (½ cup more if desired for a topping)

¼ Sliced Almonds

¼ Tablespoon of Cinnamon

1 Teaspoon of Vanilla

1 Cup of Almond Milk

Steps:

  1. First, you want to preheat your oven to 375° and bring 2 cups of water to a boil.

  2. Once the water is boiled, turn off the stove and add in the oatmeal. Stir, then cover for 15 minutes.

  3. Next, make your flax egg. Combine the ground flax seeds with the 3 tablespoons of water. Stir the ingredients and let sit for 1 minute.

  4. While you wait for your flax egg, put your bananas into a bowl and smash until smooth. Once smooth, add in the flax egg, maple syrup, and the protein powder. Stir the ingredients.

  5. Add the oatmeal to the stirred ingredient and mix it. Then add the remaining ingredients to the mixture.

  6. Pour the mixture into a 9”x13” ceramic baking pan. Top with sliced bananas and more blueberries (if desired).

  7. Place the oatmeal in the oven for 50-60 minutes, or until the top turns golden brown.

  8. Take the oatmeal out and let sit for 10 minutes before serving. You can top with almond butter or more fruit if desired. Enjoy!
