Sweet Potato Brownies

Brownies are one of my favorite desserts. They’re fudgy, chocolatey and delicious! However, most brownies have a lot of sugar in them and therefore, are very unhealthy. That’s why I like to make Sweet Potato Brownies. They’re healthy and the sweet potatoes help make the brownies fudgy and soft. My favorite sweet potato brownie recipe that I’ve found was made by the blog “The Conscious Plant Kitchen”. Here is the recipe:



Ingredients:

  • 1 Sweet Potato

  • ⅓ cup Coconut Sugar

  • ½ cup Oat Flour (or oats)

  • ½ cup Almond Flour

  • ¼ cup Coconut Oil

  • ¼ cup Maple Syrup

  • ⅓ cup Unsweetened Cocoa Powder

  • ⅓ cup Chocolate Chips


Directions:

Sweet Potato Puree

  1. Preheat the oven to 350°F.

  2. Peel a large sweet potato and then dice into small cubes.

  3. Place the sweet potato into a microwave safe bowl and microwave until the sweet potato is soft. (I had to microwave mine for about 8 minutes).

  4. Leave for 15 minutes or until cool.

  5. Once it’s cool, mash the sweet potato with a potato masher.

  6. Use 1 ⅓ cup of sweet potato for the brownies.


Brownie Batter

  1. While the sweet potato is cooling, prepare the oat flour. Place all of the oats into the food processor on high until all of the oats are blended. (If you already have oat flour you can skip this step).

  2. Add the almond flour, coconut sugar, melted coconut oil, unsweetened cocoa powder, and sweet potato. Blend all of the ingredients on high for one minute.

  3. Add the chocolate chips and blend the ingredients on low for 10 seconds until the chocolate chips are mixed in.

  4. Take out an 8x8 brownie tray and layer it with parchment paper.

  5. Spread the Brownie Mix along the tray and sprinkle with the rest of the chocolate chips.

  6. Place in the preheated oven for 45-50 minutes.

  7. After it's heated, take it out and let it sit for 15 minutes. Then enjoy!
